Local recipe week 2

For this week’s edition of local recipe I couldn’t decide between asparagus and spinach, but finally decided on spinach. I decided to go to an old standard, creamed spinach. I’m going to admit, until recently I had never had creamed spinach. When I eat spinach it’s on a sandwich or in a fritatta. But after trying creamed spinach recently while on a trip I found out I liked it. I liked it quite a bit. So I thought that would be a nice focus this week.

But, that’s the fun of trying new things and shopping at the Farmer’s Markets. Now over the next few weeks I’ll have to fine tune the recipe, or find another, that I like better.

Spinach is quite easy to grow in a garden spot at home, and two little plants will grow enough spinach to please everyone south of Popeye. If you have a little room in your garden give it a shot.
